Meal Planning: Month of September

Still toasty hot here in AZ! We are trying to eat up the good tasty fruit ad veggies now before the fall / winter comes :) But excited for the cool weather! As a working and traveling mom with two very busy and active kids (sports and school and social life!) Not to mention a high-energy 1 year old Goldendoodle puppy, trying to come up with healthy, good tasting meals can be a pain! I have tried to take some of the guess work out of coming up with fresh, new ideas and added links to some recipes below :)


WEEK 1:

Monday: Salmon baked with green beans, roasted potatoes and salad

Wednesday: Pasta Fagioli

Friday: Chicken Tortilla Soup WEEKEND: Take out, Leftovers, Tex-Mex Chicken Soup



WEEK 2:

Monday: Baked Potato Bar

Tuesday: Baked Chicken with roasted vegetables and sweet potato rounds

Wednesday: Boboli Pizza - Put whatever you want on it :)

Thursday: Big Cobb Salad - I make mine with Baked chicken breast (cubed or shredded), cut cherry tomatoes, cooked and crumbled bacon, hard boiled eggs, green onion, fresh corn from the cob, diced avocado and diced cucumber



WEEK 3:



WEEK 4:












Breakfast:

* Zucchini, Peppers

* Egg Scramble, Basic egg and tomato sandwich

* Leftover sweet potato (Bread or Muffins) drizzle with honey, top with applesauce or just good ole' butter! Yummy recipe for sweet potato bread here or here !

* Waffles made with Kodiak Pancake Mix, fresh fruit & scrambled eggs

Dessert (because you are nuts if you don't treat yourself sometimes!!)




Refreshing drinks (alcoholic and non-alcoholic) - for the kids drinks I just through them together with ingredients I had in the house, but I've tagged some good looking recipes below.


* We travel to Puerto Vallarta almost every year and I usually

bring a few reusable cups home from the drinks we get at the pool (Sheraton Buganvillias Vacation Club) It makes it more fun for the kids and they pretend they are in a resort and not at their pool at home :)
