Yummy Mole' Tacos

As part of my weekday meal planning I love adding recipes that are easy and quick.

This recipe is VERY easy, delicious and a major family favorite!


I also love that it is a crock pot recipe, which means I can actually get things done while it cooks! :)


To start the recipe I lay out all of the items needed and use a large bowl to add all of the ingredients in so that they can get mixed well before I layer over the chicken breasts in the crock pot.







Once all of the ingredients are mixed in the bowl, I lay 3 or so chicken breasts on the bottom of the crock pot, I put a layer of the mixture over those and then lay another 3 or so chicken breasts on top and then layer the remaining ingredients over top. (obviously if allergic to PB you can leave that out, and it won't make a huge difference)





I cover and turn the crock pot on high for about 5 - 5 1/2 hours

( I do shred the chicken a bit at about hour 4 if I am home).


It smells AMAZING once it really gets cooking :)





Toppings can be anything you like! I realized I must not have had tomatoes when I took this photo :)





What my kids love to put in their Mole' Tacos:

- Sour Cream or Crema

- Shredded Cheese

- Avocado

- Green Onion

- Cilantro

- Diced Tomatoes

*** This recipe was modified from the original recipe from Food Network Magazine.

I omitted the green bell peppers and use chicken breasts instead of bone-in turkey breast.
